Octopus met aardappelen wordt in elk caf\u00e9 en restaurant in de provincie geserveerd. Vooral liefhebbers van zeevruchten zullen genieten van dit recept. Het gerecht is vrij snel en gemakkelijk te bereiden. Het geheim is om de octopus goed te bereiden, want het vlees kan taai worden. Beginnende koks kunnen vals spelen en kant-en-klare diepvriesporties kopen. Er zijn talloze recepten voor octopus. Het wordt niet alleen geserveerd met aardappelen, maar ook met rijst, groenten en zelfs als gehaktballetjes. Wij bieden u het klassieke recept voor octopus op Galicische wijze. <strong>Bereidingstijd<\/strong> : 60 min. Voor 5 personen (3,90 euro\/portie).<\/p>\n<h4> Ingredi\u00ebnten:<\/h4>\n<ul>\n<li> 1 octopus van 2 tot 3 kg<\/li>\n<li> 1 kg aardappelen<\/li>\n<li> Grof zout (naar smaak)<\/li>\n<li> Zoete of pittige peper (naar smaak)<\/li>\n<li> Olijfolie (extra vierge)<\/li>\n<li> Water<\/li>\n<\/ul>\n<p> [deze plaats] <strong>Het karkas voorbereiden:<\/strong><\/p>\n<ul>\n<li> Om octopusvlees mals te maken, moet het eerst worden ingevroren.<\/li>\n<li> Haal het de dag voor het koken uit de vriezer, doe het in een grote kom en zet het in de koelkast. Al het overtollige vocht verdwijnt, en daarmee ook de onnodige onzuiverheden.<\/li>\n<li> De octopus moet in een grote pan gekookt worden. Let op: het water hoeft niet gezouten te worden. Zout wordt direct aan het gerecht toegevoegd! Zodra het water kookt, leg je de octopus erin. Het karkas moet met de kop in het water worden gedompeld, nadat het meerdere keren in kokend water is gedompeld. Dit proces wordt &quot;salsa&quot; genoemd. Zo zorg je ervoor dat het hele karkas gekookt wordt en zijn vorm behoudt.<\/li>\n<li> Afhankelijk van de grootte wordt de octopus 30-40 minuten op middelhoog vuur gegaard (in ons geval 40 minuten). Het gerecht wordt af en toe omgeroerd.<\/li>\n<\/ul>\n<h4> Voorbereiding.<\/h4>\n<ol>\n<li> Terwijl de octopus kookt, schil je de aardappelen en snijd je ze doormidden.<\/li>\n<li> Laat de octopus na het koken een paar minuten in een pan met water staan om de bouillon te laten trekken. Giet het karkas vervolgens af in een vergiet en kook de aardappelen in de bouillon (ongeveer 15 minuten). Je kunt de aardappelen eventueel ook in apart water koken. Dit hangt af van je persoonlijke smaak.<\/li>\n<li> Snijd de octopus in kleine blokjes (1 cm). Doe dit bij voorkeur met een keukenschaar.<\/li>\n<li> Aardappelen worden op een bord (traditioneel van hout) gelegd en er worden stukjes octopus bovenop gelegd. Dit alles wordt rijkelijk bestrooid met zout en kruiden en besprenkeld met olie.<\/li>\n<\/ol>\n<p> Het is klaar om te serveren.
